Euclid is a European Space Agency telescope designed to uncover the nature of cosmic acceleration and Dark Energy. It is conducting a large survey of galaxies, which will be used to probe the large-scale mass distribution of the Universe through weak gravitational lensing and galaxy clustering. The unprecedented statistical power of the survey means that many modelling and analysis assumptions need to be revisited and refined. I will explain how we plan to use Euclid weak lensing data to constrain cosmological models and describe specific challenges that must be overcome to deliver precise results. I will present recent advances in the statistical analysis of galaxy catalogues that significantly improve upon standard techniques. Finally, I will discuss how Euclid might influence the landscape of cosmological models and cast light upon current tensions in Lambda-CDM.
